Meet the Chef
Javier Romero

Originally from Moroleón, Guanajuato, his culinary dream began in 2008 when he started the School of Gastronomy at Instituto Politécnico de Guanajuato. He concluded in 2012 with an internship at the Martín Berasategui restaurant in Spain, which has 3 Michelin Stars.

For Chef Romero it has always been important to travel and experience new challenges to improve his gastronomic techniques. He delighted palates in sophisticated Mexican cuisines such as luxury restaurants and resorts: Secrets Marquis Los Cabos, Dreams Riviera Cancun, Secrets The Vine Cancun. He has also had experience in restaurants and international companies such as Lone Star Steakhouse USA.

He has showcased his culinary skills at special events such as Food and Wine 2017, Gala Dinner Tribute New York; and pairing dinners at champagne and wine houses such as Moët & Chandon, Dom Pérignon, Ruinart, Veuve Clicquot, Adobe Guadalupe, L.A. Cetto, Monte Xanic, among others.

Later, he moved to Cancun to join the Fairmont Mayakoba resort team with 5 Diamonds of the American Automobile Association; and today he is Executive Chef at the Piaf restaurant at Grand Velas Los Cabos, where he delights guests with his refined culinary techniques.

Chef Romero likes good cuisine with roots in tradition and seasonal products with natural flavors that harmonize with each dish, taking each note of flavor to another culinary level.
